Number of Servings: 6


    1/2 c. bacon pieces
    1 c. shredded Swiss cheese
    1/2 c. Heart Smart Bisquick
    1/3 c. Hellman's light mayo
    3/4 c. skim milk
    1 egg
    1/4 c. liquid egg substitute
    1/8 t. black pepper
    2 T. fat free Ranch dressing
    1 c. shredded lettuce
    4 oz. chopped tomatoes


Spray 9" pie pan with cooking spray. Layer bacon then cheese in the bottom.'

In medium bowl, combine Bisquick, mayo, eggs, milk, and pepper with a whisk until smooth. Pour over bacon and cheese.

Bake at 400 degrees for about 25 minutes or until top is golden brown. Remove from over and let stand for 5 minutes.

Spread ranch dressing over the top. Sprinkle with lettuce and tomato.

Makes 6 servings.
