The flavor of a picnic in a bowl, this is a hearty, high-fiber, low-fat soup. The flavor of a picnic in a bowl, this is a hearty, high-fiber, low-fat soup.
Number of Servings: 5


    1/2 pound of dried navy beans - soaked over night
    5 cups low fat, low sodium chicken broth, vegetable broth or water
    1/2 ketchup (I use one-carb sugar free)
    1/3 cup blackstrap molasses
    2 cups raw sweet potatoes, peeled & diced
    1 cup onion, diced
    1 cup green bell pepper, diced
    pinch of ground cloves
    1/4 tsp dried thyme
    fresh ground black pepper to taste
    cayenne pepper to taste (optional)


Wash, sort and soak beans overnight, or quick soak according to package directions. Drain

Preheat oven to 350*

Place all ingredients in an oven proof pot. Place on stove and bring to a boil, stir cover and place in oven for 1 1/2 hours. ( I cook on top of the stove & have even thought about using a slow cooker, but haven't experiemented.)
