    1.5 pounds of organic chicken breast w/o bone or skin
    1 can of Hunts Diced Tomatoes w/Basil, Garlic, and Oregano
    1 garlic clove
    1-1 1/2 t basil


Begin by cutting the chicken into strips. Place strips in a sprayed casserole dish. Once the chicken is in the dish, add the onion, basil, and garlic. Then add the can of tomatoes, making sure all of the chicken is covered w/the tomatoes. Cook in microwave, begin with 100% setting for 5 min., then stir. Cook at 50% setting for 5 min, stir again. Repeat the 50% cycle for two more times. Let stand for 15 min. before serving. Serve with 1/2 c brown rice per person. Makes 8 servings.
