Introduction

This is the classic brunch casserole, but lightened up a whole lot. It's still pretty darn good! This is the classic brunch casserole, but lightened up a whole lot. It's still pretty darn good!

Ingredients

    I bag of frozen hash browns (thawed)
    1 can condensed cream of cheddar soup
    12 oz plain low fat yogurt
    2 tsp dry mustard
    2 cup shredded sharp cheddar cheese

Directions

Mix all ingredients except cheddar cheese together (it's easiest to mix the mustard powder in with the wet ingredients and then stir in the potatoes. Spread in casserole dish (sprayed with Pam) and sprinkle with cheddar cheese. Bake uncovered until cheese on top is bubbling and beginning to brown.
