Ingredients

    2 cups whole wheat pastry flour
    4 tbsp. ground flax seeds
    2 tbsp. ground chia seeds
    1/4 cup whole oats, ground
    1/2 cup shredded, unsweetened coconut
    1 tsp. baking soda
    2 tsp. baking powder
    1 tsp. salt
    4 very ripe bananas
    4 tbsp. natural peanut butter
    4 tbsp. honey
    4 tbsp. canola oil or other neutral oil
    1/2 cup milk
    1/2 cup water
    1-2 tsp. vanilla


Directions

Preheat oven to 350. Grind chia and oats (and flax seeds if unground) and add to flour. Mix in salt, baking soda and baking powder. Mix in coconut. In a separate bowl, mash bananas and mix in oil, peanut butter, honey, vanilla, milk and water. Mix wet and dry ingredients and fill 18 regular size muffin cups (spray or oil lightly, use paper muffin cups or nonstick tin). Bake at 350 for approximately 35 minutes or until done.
