We used ground turkey instead of beef to lower the calories and it is NOT red meat! We used ground turkey instead of beef to lower the calories and it is NOT red meat!

    1lb ground turkey
    1 onion diced
    1 can of mushrooms
    1 Old El Paso Taco seasoning package
    2 cans of Old El Paso red enchilada sauce
    8 multi grain tortillas
    2 cups Kraft Fat free Cheddar Cheese
    1 cup salsa


Brown the ground turkey along with the diced onions and can of mushrooms. After the meat is brown and cooked through I drained the extra juices (fat) off. Then pour one can of the enchilada sauce, taco seasoning package, and the 1 cup salsa into the meat mixture. After it comes to a bowl, spoon the meat mixture into the tortillas, roll and place in a 9 by 13 pan. If any meat mixture remains pour it on top of the enchiladas. Then take the second can of red enchilada sauce and pour it over top. Then we pour the cheese over top and cook in the oven at 350 for 20 minutes.

We serve it with cheesy refried beans!! My family loves it and I hope you will too! I have even served this to company and they did not know that I was using ground turkey nstead of ground beef.
