    4 c white whole wheat flour
    2.5 c all-purpose flour
    1 tsp cinnamon
    1.5 T yeast
    1 T kosher salt
    .25 c vital wheat gluten
    1.5 c lukewarm water
    .5 c canola oil
    .5 c honey
    2 tsp vanilla
    2 c very ripe banana puree
    2 c walnut pieces (optional though included in calorie count)
    egg wash, raw sugar for sprinkling on top (not included in calorie count)


Mix dry ingredients. Add wet, mix. Let rise, covered, for 2 hours. Refigerate for 2 hours or more. Grease muffin pans, shape dough into golfball sized pieces, let rise for 40 minutes, loosely covered. If desired, prepare egg wash and sprinkle with raw sugar.

Bake at 375 for 20 minutes.
