    3 slices cooked turkey bacon
    1/3 c apple, peeled and diced
    3/4 c brewed winter spice (apple cider) tea
    1 c just-add-water pancake mix (I use Hungry Jack extra fluffy)

    Optional: For more fiber, you can add 1/4 cup oats for every 1 c pancake mix, using a little less mix. This is not included in the nutritional information here.

    Also, you can use apple cider in place of the tea, but that will add more sugar and calories. Tea is great because you can try out so many different flavors!


Peel and dice apple, crumble bacon and set aside.

Measure pancake mix, instead of adding water as the box says, add brewed cider tea. Use the same amount as water, depending on the amount of mix you are using.

Add apple and bacon, cook on hot griddle or frying pan as you normally cook pancakes.

I save a little bacon and apple to use as topping with sugar-free syrup.

Makes 4 5-inch pancakes. The nutritional information is per pancake. They are very filling!
