    1 Tbsp Olive Oil
    8 oz Chicken Breast
    1/3 of a Large Sweet Onion
    1/3 of a Large Red Pepper
    1 Large Baby Zucchini
    1 Large Yellow Summer Squash
    Season to Taste


Saute chicken in 1 Tablespoon olive oil, add onion and red pepper. Season with favorite spices. Add slices of zucchini and squash. Continue to cook until vegetable are tender crisp.
