    Reduced Fat Nilla Wafers
    8 oz. lowfat cottage cheese (room temp)
    1 cup cold skim milk
    1.5 Tbsp lemon juice
    1 small box instant cheesecake pudding
    8 oz. Lite Cool Whip (completely thawed)
    37 Foil lined cupcake cup


Place a Nilla Wafer at the bottom each cupcake cup
Beat the cottage cheese until smooth
Add milk and lemon juice to the cottage cheese and beat until smooth
Stir in pudding mix, then fold in Cool Whip
Spoon in Pudding Mix about 3/4 of cupcake cup
Crush 1 Serving of the Nilla Wafers and Sprinkle on the tops of pudding
Refrigerate overnight so the Nilla Wafer softens
