Number of Servings: 4


    12 oz beef eye of round (approx. 2 pieces, cut in chunks approx. 1" sq)
    1 large potato, raw, peeled and cut in chunks
    1 large carrot, raw, cut in chunks
    1 medium onion, cut in chunks
    1 cup low sodium beef gravy (dry mix...)


Peel potatoes, cut them and the carrots and onion in chunks, drop into stew pot and fill with just enough water to cover. Should be a cup, possibly two. Heat to boiling, maintain light boil until vegetables are tender. Meanwhile, brown meat in oil in non-stick pan. Add gravy mix a bit at a time, stirring frequently. Add a bit of the 1 cup of water, a bit at a time, until all the pieces of meat are well coated and a bit sticky. Vegetables should be done by then, so add the meat to the pot and mix well, then let simmer for an additional ten minutes (or more--doesn't hurt it to cook longer!) Makes four servings.
