Ingredients

    Use whatever vegetables you like! I usually use:

    red onion; asparagus; bell peppers (all colors); celery; carrots; zucchini; green beans; and baby bok choy.

    I marinate the vegetables in:
    1/2 cup Balsalmic vinegar
    1/4 cup olive oil
    black pepper, ground mustard seed, ground ginger and ground garlic powder (not salt) to taste.

Directions

Chop all the vegetables into chunky pieces and place in a resealable plastic bag.

Mix the olive oil, balsalmic vinegar, and spices together and pour over the veggies in the bag. Seal the bag tightly and place in the refrigerator for several hours to marinate (turning the bag frequently).

When ready to cook, drain the marinade off the veggies and place them in a basket or tray, and place of the BBQ. Stir frequenly until veggies are tender (about 20 minutes)
