    1.5 cups chickpeas
    1 tbsp. lemon zest
    1/4 cup onions
    1 10 oz. package frozen spinach (thawed)
    1 egg, beaten
    1 tbsp. olive oil
    2 cloves garlic
    1/2 tsp. cumin seed
    1/2 cup chickpea flour
    salt and pepper


In a pan, heat olive oil. Cook onions, garlic, and spinach for 10 minutes. Remove from heat and transfer to food processor. Process until smooth. Add chickpeas and lemon zest and pulse a few times until mixture is smoother, but still a bit chunky. Add egg and stir until incorporated. Add flour and spices and stir. Form patties (makes four). You may cook the burgers in a skillet until browned, or bake them in the oven for 30 minutes at 350.
