Ingredients

    2 cups baby spinach
    1/2 cup raspberries
    1 small apple cut into chunks (fuji or gala)
    1/2 cup edamame
    1/4 cup celery, chopped
    1/4 cup red onions, chopped
    1 oz creamy goat cheese
    2 tsp lemon juice
    5 tsp water

Directions

Mix the goat cheese, lemon juice and water. Blend well, set aside.

Mix the apples, raspberries, onions, celery, edamame. Stir in the goat cheese mixture. Blend well.

Toss in the baby spinach leaves.

Eat and enjoy
