    2 Chicken Breasts (13 ounces) - small pieces
    Broccoli Crowns - 1-2 Bunches
    Red Potatoes - 2 medium sized
    Neufchatel Cheese - 1/2 of an 8 ounce package (1/3 less fat cream cheese)
    Wishbone Fat Free Italian - 4 Tbsp.


I boiled water for my potatoes and broccoli (many people don't believe in boiling their broccoli; you may want to steam yours). When the water boiled I added the potatoes and the broccoli. Since the potatoes take longer to cook, I removed the broccoli when still crisp, but before mushy (about 5 minutes) and let the potato continue cooking. Remove/drain potatoes when done.

While the potato and broccoli cooked I cooked my chicken in a skillet coated with cooking spray.

In the bottom of the empty, hot pan that I used for the potatoes/broccoli, I added the cream cheese and Italian dressing, cooking on low until mixed and creamy.

Combined everything together and separated into three servings.
