Easy banana pancakes with the added benefits of ground flaxseed. Easy banana pancakes with the added benefits of ground flaxseed.
Number of Servings: 5


    1 cup flour
    2 teaspoons baking powder
    1 tablespoon sugar
    1/4 teaspoon kosher salt
    6 tablespoons ground flaxseed meal
    1 egg, beaten
    1 cup milk
    2 tablespoons vegetable oil
    2 ripe bananas, mashed
    Regular or butter-flavored cooking spray


In a medium bowl, combine dry ingredients (flour, sugar, baking powder, salt, and flaxseed meal).

In a separate, larger bowl, combine wet ingredients: egg, milk, oil, and bananas. Meanwhile, spray griddle with cooking spray and place on medium heat.

Add dry ingredients into wet, and mix until moistened. Batter will be lumpy. (Avoid over-mixing.)

Drop approximately 1/4 cup of batter onto pre-heated griddle. Cook each side until golden brown.

Makes approximately 12 small pancakes. Suggested serving size is 2 pancakes.
