I like to make these up on sunday morning and freeze. That way during the week we can just grab one, microwave for 30 secs and be off with a healthy breakfast. Number of Servings: 12

Ingredients

    4 cups liquid egg whites (about 1 32oz carton)
    1 cup red bell pepper
    4 slices bacon
    1 cup jack cheese
    pepper to taste

Directions

Chop the bacon and cook in pan til crispy.
Shred the Jack Cheese.
Chop pepper

distribute each equally in muffin tin. season with pepper. pour egg whites equally into muffin tin.

Cook at 375 for 15 mins.

makes 12 "muffins"
