Ingredients

DRESSING
1 Cup fat-free vanilla yogurt
2 TBS powdered sugar
1 tsp grated orange peel
SALAD
4 Cups coarsely shredded carrots (about 5 medium)
1 8 oz can crushed pineapple (in it's own juice), well drained
1/2 cup raisins (I use golden raisins)
Directions
To make dressing: in small bowl, use a wire whisk to stir together the yogurt, sugar and orange peel.
To make salad: in large bowl, combine carrots, pineapple and raisins. Add the dressing and fold in until the carrot mixture is coated. Cover and chill in the refrigerator about 30 minutes before serving.
Makes 8 side dish servings.
