    1 lemon
    2 tsps dried oregano
    3 cloves garlic, minced
    1 tbsp olive oil
    1/4 teaspoon salt
    1/4 teaspoon ground black pepper
    3 chicken quarters


1. Preheat oven to 425 degrees.

2. in a 9 x 13 baking dish, grate the peel from 1.2 the lemon, squeeze the juice and add peel to oregano, garlic, salt, and pepper.

3. Remove skin from chicken pieces and discard. Coat chicken pieves with lemon mixture and arrange, bone side up in the baking dish. Cover dish and bake for 20 mins. Turn and baste chicken.

4. Reduce heat to 400 and bake uncovered for 30 more minutes.
