Ingredients

    3.5 cups cooked brown rice
    1 tbsp olive oil
    2 tbsp minced garlic
    1.625 pounds (26 oz) raw boneless, skinless chicken breast cut into chunks
    6 cups frozen stir fry vegetables
    2 cups mandarin oranges in light syrup
    2/3 cup orange juice
    2 tbsp reduced sodium soy sauce
    2 tbsp honey
    1 tbsp splenda
    1.5 tsp ground ginger
    Zest of one orange
    1 tsp corn starch
    1 tbsp crushed red pepper

Directions

Saute minced garlic in olive oil until browned. Add cubed chicken (sprinkle with salt and pepper to taste; not included in nutrition facts) and saute until cooked on the outside. Add frozen vegetables and cook until chicken and vegetables are thoroughly cooked and liquid has evaporated. Make a sauce using remaining ingredients. Add to cooked chicken and vegetables. Heat, while stirring, until sauce thickens. Serve 1 cup of chicken and vegetables over 0.5 cup of brown rice. Makes 7 servings.

    I didn't have exactly all the same ingredients and I was making the meal for a smaller portion but I was surprised at how good it was! My dinner guests loved it too! It was a nice change in the usual type of dishes we end up cooking! - 8/18/11
