Number of Servings: 4


    1 can tomato paste
    1/4 c umeboshi vinegar
    1/4 c dry red wine
    1/2 c orange juice
    1/4 soy sauce
    1/4 c minced garlic
    1/4 c fresh parsely
    2 TBS fresh tarragon or 1 TBS dried
    2 TBS minced fresh rosemary

    200 grams setian

    Mixture to coat with setian the day of cooking:
    .5 c flour
    1/2 tea salt
    1/2 tea black pepper
    .5 c pecans ground
    2 TBS rosemary finely chopped
    2TBS olive oil


1. mix the marinade all together and mix with the seitan, let set of 3 hours or over night
2. when ready to cook, mix the coating mixture together
3. in a skillet heat 2 TBS oil
4. coat the seitan with the flour mixture and saute in pan for 2 to 3 minutes a side.
Serve with pasta ( I use whole wheat) **** this is not included in calories
