    2 lg. fresh eggs
    1 oz. Mozzarella Cheese (whole milk)
    salt and pepper to taste
    1 tsp water


Crack eggs in to bowl, add water, salt and pepper, whisk until eggs are lemon yellow in color and well blended.

Pour onto heated and greased skillet, place shredded cheese on to one side of omelet. Fold eggs over as they cook, allow to finish cooking. Garnish with shredded cheese, to taste. Serve.
