Introduction

The secret to this is to blend the banana in a blender with a little of the milk. I have also added chopped pineapple (drained) or mixed berries for variety. Ingredients

    3 3/8 cup Oat Bran
    1.5 Tbsp Baking Powder
    3/8 cup Brown Sugar, packed
    3/8 cup Pecans
    1 7/8 cup Milk, 1%
    3 large very ripe Bananas
    3 Egg whites
    3 tbsp Canola Oil


Directions

Combine dry ingredients. Pecans can either be mixed in or sprinkled on top of the muffins. Mix dry ingredients with wet ingedients (after banannas are blended). Spoon into muffin tins. Bake at 425 for approximately 17 minutes.

    Very Good
    These are so so tasty and filling. I added a little cinnamon and nutmeg to them. Also as a note to other bakers it looks runny but the oat bran really soaks up the milk. So just let it sit if you think you did it wrong. - 4/29/12
