    Canola oil cooking spray
    3 apples, peeled and sliced
    4 t fresh orange juice
    1 t vanilla extract
    3 T whole-wheat flour
    3 T rolled oats
    2 T brown sugar
    4 t canola oil
    2 t honey
    1 t cinnamon
    1/8 t nutmeg


Heat oven to 375, Coat four 4-oz ramekins with cooking spray (if you don't have ramekins; try 8 sections to a muffin pan or 2 mini-loan pans).

Combine apples, juice and vanilla in a bowl; set aside. Combine remaining ingredients in another bowl with hands until moist and crumbly. Spoon fruit mixture into ramekins; scatter crumb mixture evenly over the top of each.

Bake until fruit bubbles and top is golden brown, 20 minutes.
