    4 slices wholegrain bread, 1 side on each lightly sprayed with olive oil
    2 fresh eggs
    4 tbsps grated Edam Cheese
    1 tbsp chopped chives (parsley or basil)


* Place 2 slices of the bread, oiled side down, in a toastie maker.

Gently push the bread into the hollows a little so it can capture the egg.

Break an egg onto each slice, breaking the yolk to ensure the yolk fills both halves of each toastie.

Top with the grated cheese and herbs, season with Salt and Pepper. Cover with remaining bread slices, oiled side up.

Close the toastie maker and cook for 2-4 minutes until golden.
