Did not know what to do with left over spinach so I made this up, really good! Did not know what to do with left over spinach so I made this up, really good!
Number of Servings: 4


    4 cups fresh baby spinach
    1/4 cup white pizza cheese, full fat used
    1/2 tsp garlic salt
    1tsp garlic powder
    4 oz penne pasta, barilla plus used
    1 tbsp and 1 tsp oil, smart balance cooking oil used


Boil pasta in water, do not add oil, until al dente and drain
Remove stems and chop or tear spinach into pieces
Heat oil over medium and add spices, then turn to low once kitchen is smelly; do not burn garlic.
Add spinach, stir and wilt, then add pasta and cheese.
Serve before cheese gets too melted or it sticks terribly to pan!
