Ingredients

    1 cup fresh mushrooms, sliced
    1/2 onion chopped
    1/2 red bell pepper, sliced
    2 whole eggs
    6 egg whites
    1/2 cup reduced fat cheddar cheese, shredded
    1 whole wheat pita, cut in half
    Hot pepper sauce to taste

Directions

Makes 2 servings

1. Coat a non-stick skillet with cooking spray and heat over medium heat. Add mushrooms, onion and bell pepper; saute until tender, about 5 minutes.
2. While the vegetables are cooking, mix eggs and egg whites in a medium bowl.
3. Pour the egg mixture over the sauteed vegetables and cook, stirring occasionally until set, about 5 minutes. Add cheddar cheese and cook 2 more minutes, until cheese melts.
4. Diivide the mixture into 2 portions and spoon into pita bread halves. Top with hot pepper sauce, serve.
