Introduction

This spicy soup is a childhood favorite! This spicy soup is a childhood favorite!
Number of Servings: 20

Ingredients

    2 tbsp Olive Oil
    1 lb Ground Lean beef
    1 yellow onion, chopped
    3 garlic cloves, minced
    3 stalks celery, chopped
    3 carrots, sliced
    1 large can of diced tomatoes
    3-6 cups of water (depending on how soupy you want it
    1 can green chili peppers
    3 tbsp chili powder
    Chatarene's seasoning (to taste)
    3 tbsp Oregano
    1 cup Elbow Macaroni

Directions

Heat Olive Oil and brown ground beef, breaking it up into smaller chunks.
Add onion, celery, carrots, and garlic and allow to saute for a few minutes.
Add Green chili's, canned tomatoes and water. Bring to a boil.
Add elbow macaroni and allow to simmer for a few minutes until the noodles are tender.
Turn to low and add seasonings.
The elbow macaroni will expand more and make the soup thicker overnight, so add more water if needed.
