Ingredients

    3 medium potatos or 3 cups shredded.
    1 1/2 C. second nature egg substitute
    1 tsp Garlic powder
    1 tsp Onion powder
    1/2 tsp Black Pepper
    2 tsp Salt
    1 package (10 oz) yields frozen Spinach
    1 cup borden garden meddley shredded
    cheese,
    1 tsp Oregano, ground
    1 tsp Basil
    1/2 tsp Nutmeg, ground
    1/2 C. non fat Milk
    2 Tbsp Olive Oil

Directions

wash and shredd potatos squeeze dry and put into mixing bowl. add 1/4 C. egg substitute, garlic owder, onion powder, 1 tsp of salt, pepper and olive oil . pat potato mixture into a greased 9 inch pie pan. bake in a 425 degree oven for 25 minutes or untill lightly browned. remove from oven and ollow to cool.

reduce heat to 350.

Mix thawed and drained spinach with the remaining ingredients. pour into potato crust and bake for 30 - 40 minutes or until set.
makes 8 servings.
