Number of Servings: 20

Ingredients

    125g smooth ricotta cheese (low fat)
    2 Tbs (1 1/2 Tbs) cocoa Dutched if possible, disolved in 3 Tbs (2 Tbs) boiling water, and cooled
    1 Tbs (2 tsp) instant coffee (optional)
    1 1/2 Tbs (1 Tbs) honey
    3/4 cup fine desiccated coconut
    3 Tbs (2 Tbs) extra coconut to roll
    30g uncrystalised (naked) ginger (Buderim) finely chopped (optional)

Directions

Mix all ingredients except extra coconut
The mixture will be very soft but firms up in the refrigerator
Form into small balls (1 tsp) and roll in extra coconut.
Store in fridge till ready to use, or freeze
