Ingredients

    Olive Oil, 2 tbsp
    Onions, raw, 1 medium
    Carrots, raw, 4 large
    Parsnips, 2 parsnip
    Celery, raw, 4 stalk, medium
    Bay Leaf, 1 tbsp, crumbled
    Pepper, black, .5 tsp
    *Campbell's low sodium chicken broth, 12 cup
    Water, tap, 2 cup (8 fl oz)
    2 lbs Chicken Breast, no skin
    Egg Noodles, enriched, 16 oz
    Parsley, .25 cup
    Dill weed, dried, .5 tsp

Directions

Makes 8 2-cup servings

1. Saute onions in olive oil for 4 minutes.
2. Add carrots, parships, celery, bay leaves, black pepper, chicken broth, and water. Bring to a boil over high heat.
3. Add uncooked chicken pieces to broth and brink back to boil.
4. Add noodles and simmer until tender, about 8 minutes.
5. Remove bay leaves, then stir in parsley and dill.
6. Ladle a portion (2 cups) into a bowl, and serve.
