Introduction
Original recipe in Eating For Life cookbook uses 1/2 cup soy flour where I've used 1/4 cup each almond flour and all purpose flour. I've done it both ways and the brownies have a better consistency using the almond and all-purpose flours. Ingredients

*Almond Flour, Bob's Red Mill, 1/4 cup
*Bob's Red Mill All Purpose Baking Flour, 1/4 cup
*Bob's Red Mill 100% Stone Ground Whole Wheat Flour, 1/4 cup
*Splenda, 24 tsp
Cocoa, dry powder, unsweetened, 1/4 cup
Salt, 1/4 tsp
*Canola Oil, 1/4 cup
Vanilla Extract, 2 tsp
6 egg whites
Applesauce, unsweetened, 1/4 cup
Water, tap, 1/4 cup
Walnuts, 1/3 cup
Directions
1. Preheat oven to 350 deg F. Lightly coat an 8x8 baking dish with cooking spray.
2. In a large mixing bowl, sif totgether the flours, Splenda, cocoa powder, baking powder, and salt.
3. In a medium mixing bowl, combine canola oil, vanilla extract, egg whites, applesauce and water. Pour applesauce mixture into flour mixture, and stir until just combined. (Stirring too much will make a tough brownie)
4. Pour brownie batter into baking dish and sprinkle with walnuts. Bake 15 minutes or until edges spring back when touched gently. The center will still be soft.
5. Allow brownies to cool and then cut into 12 pieces.
