    1 TBSP Olive Oil
    1lb Boneless Chicken Breast
    1 Large Onion, sliced
    1 Small Red Pepper, chopped
    3 Cloves Garlic, minced
    1 can Cram of Mushroom Soup 98% Fat Free
    1/2 Cup of Water
    2 TBSP White Vinegar
    1 tsp. Dried Rosemary
    1 Bag of Baby Spinach (Or 1 pkg of frozen spinach - thawed and drained)


1. Heat 1 TBSP. of oil in a 12" skillet over medium-high heat. Add chicken cut into strips or squares. - usually 6 minutes on each side.

2. Remove chicken from pan. Add onion ad pepper and cook for 1 minute stirring occasionally. Add garlic and cook until vegetables are tender-crsip.

3. Stir in soup, water, vinagar and rosemary. Heat until it begins to boil. Reduce heat to medium. Stir in spinach. Cover and cook for 2 minutes or until desitred doneness.

Serve over mashed potatoes, pasta or orzo.
