    10 oz lean ground beef
    1 tbsp basil
    1 tbsp oregano
    1 tsp garlic
    1/2 tbsp parsley
    2 cans tomato sauce (15 oz)
    1/2 box lasagna noodles (8 oz)
    1 cup mozzarella cheese, shredded
    1 cup fresh spinach
    2 cups cottage cheese (16 oz)


Brown beef, drain off excess fat. Add spices and tomato sauce. Let simmer on low about one hour or until thickend slightly.
About 45 minutes into simmering, boil water for lasagna noodles. When noodles are soft, drain. Turn off heat to noodles and sauce.
Get a 8x8 or 9x9 pan and coat with a small amount of sauce. Layer three noodles then 1/2 cup fresh spinach, 1 cup cottage cheese and about a cup of sauce on top. Put another layer of noodles then remaining spinach and cottage cheese and about a cup of sauce. Put another layer of noodles on and top with the rest of the sauce. Sprinkle mozzarella on top. Cover with foil and bake at 375 until cheese is melted and sauce is bubbly.
This also freezes well (I always double the recipe and make two). Let the lasagna cool before covering with foil securely and then put in freezer. Take it out the day you want to bake it and put it in the fridge all day. Bake at 350 for about 40 minutes.
