    2 bay leaves
    1 large can crushed tomatoes
    1 large red pepper (sliced)
    2 medium orange peppers (sliced)
    1/2 large onion (sliced)
    3 Tbsp garlic
    2 Tbsp olive oil
    Pam spray
    7 Amylu Andouille Chicken Sausage Links (1 package, sliced)


Spray a saute pan with Pam and saute sausage until browned. Set aside.

Heat oil in a large saucepan over medium high heat until hot. Add garlic and bay leaves and brown. Stir in peppers and onions and saute until onions are translucent. Add crushed tomatoes and sausage and simmer 20 - 30 minutes.

Serve over whole wheat pasta.

Makes 4 servings.
