Ingredients

Olive Oil, 1 1tsp
Tofu, firm, 0.5 block
Garlic, 2 cloves
Sun Dried Tomatoes, .25 cup
Spinach, fresh, about 5 ounces
*zuchinni (one medium), .25 serving
Mushrooms, fresh, .25 cup, pieces or slices
Parmesan Cheese, grated, 1 tbsp
*Kraft Mozzarella Finely shredded Part Skim cheese, 0.5 cup
Directions
Heat oven to 400 degrees.
Heat oil over medium heat in a large skillet
Add garlic and cook until softened, add zucchini, mushrooms and spinach. Cook until wilted and tender. Season with salt and pepper.
Drain tofu. Cut 1/2 block into 4 slices (sliced lengthwise)
Arrange tofu in a single layer into a round pie pan or a square baking dish. Sprinkle with Italian seasonings. Top slices evenly with spinach and vegetables. Sprinkle cheeses on top. Bake until tofu is hot and the cheeses are melted and bubbling, about 15 minutes.
