    *Fat Free Sour Cream, 1/2 c.
    *ricotta cheese light tre stelle, 1/2 c.
    Lemon Juice, 2 tsp
    Garlic, 1 clove, minced
    Sea Salt, 1/2 tsp
    Tabasco Sauce, 1/8 tsp
    Spinach, frozen, 1 package (10 oz), drained
    Water chestnuts , 1/4 cup, chopped
    *Green Onion (4 Green Onion), about 1/2 cup


1. Drain frozen spinach in colander.
2. Puree first six ingredients in food processor or blender.
3. Stir in spinach, water chestnuts and green onions. Sample a small amount to see if seasonings require adjusting. I sometimes add a bit more lemon or Tabasco.
4. Place in serving dish and refrigerate for at least one hour to allow flavours to meld.
5. Serve with raw carrots, celery, broccoli and cauliflower or cubed slices of pumpernickel or toasted pita bread.
