    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)
    Zucchini, baby, 2 large (remove)
    Canned Tomatoes, 1 can (remove)
    *Spaghetti/Marinara Sauce (tomato sauce), 1 cup (remove)
    *Spaghetti/Marinara Sauce (tomato sauce), 1 cup (remove)
    Cottage Cheese, 1% Milkfat, 1 cup (not packed) (remove)
    Mozzarella Cheese, part skim milk, 4 oz (remove)
    Mushrooms, cooked, 1 cup pieces (remove)
    Peppers, sweet, red, raw, sliced, 1 cup (remove)
    Onions, raw, 1 small (remove)
    *lasagna noodles (spinach)(4 Noodles), 200 gram(s) (remove)


Cook mushrooms, peppers, and onions together with a bit of olive oil.
Add marinara sauce.
Line greased casserole dish with marinara.
Place 3 cooked noodles at bottom.
Top with mushroom/onion/pepper/marinara mixture.
Top with layer of cottage cheese.
Layer with noodles.
Layer with sliced eggplant and zucchini.
Top with can of drained tomatoes.
Top with remainder of cottage cheese.
Top with layer of noodles.
Layer rest of marinara over noodles.
Top with cheese.
Make tinfoil 'tent' to cover, bake for 45 minutes.
Remove tin foil and bake for 15 more minutes.
Remove and let sit for 5-10 minutes.
