    Salmon Loaf Ingredients:

    1 can (14.5oz) Wild Salmon, flaked & de-boned
    1/2 cup Yellow Cornmeal
    1 medium Onion, finely chopped
    1 tsp Lemon Juice
    1/2 can (14.5oz) Diced Tomatoes, no salt added
    1 Egg, slightly beaten
    1/2 tsp Salt
    1/4 tsp Pepper
    1/2 tsp Ground Sage
    1 tsp Olive Oil (for oiling pan)

    Tomato Sauce Topping:
    1/2 can (14.5oz) Diced Tomatoes, no salt added
    1/2 cup Water
    1 Tbsp White Vinegar
    1 Tbsp Brown Sugar
    1 Tbsp Dry Ground Mustard


Preheat oven to 350.

In a medium-sized bowl, mix all salmon loaf ingredients (except olive oil).

Use oil to coat the insides of loaf pan. Pour mix in and pat into pan.

In the same bowl, mix together Tomato Sauce Topping ingredients. Pour this mixture on top of the loaf in the pan.

Place the loaf in the oven and cook for 40 minutes at 350-degrees.

Makes 5 servings.
