Baked butternut squash with a sausage stuffing! Baked butternut squash with a sausage stuffing!
Number of Servings: 4


    1 whole butternut squash
    2 tsp. packed brown sugar (divided)
    2 tsp. butter (divided)
    1/2 lb. hot italian sausage
    salt & pepper to taste


Preheat the oven to 350 degrees and brown your sausage. If the sausage is in link form, crumble it up.

Slice the squash in half, lengthwise, and remove the seeds. Place cut side down into a baking dish and add ~1 inch of water. Bake at 350 for 40 minutes, or until the squash is fork tender.

Remove from the oven, turn the squash over, and fill the cavity with sausage, then top with 1 tsp. of butter and brown sugar on each side. Return to the oven and bake another 20 minutes, then serve!
