    2.5 cups shredded zucchini
    1 cup canola oil
    3 eggs
    2 tsp vanilla
    1.5 cups splenda
    2 cups white flour
    1 cup soy flour
    3 tsp cinnamon
    1 tsp baking soda
    1/4 tsp baking powder
    1 cup chocolate chips


Makes 2 loaves - 16 servings per loaf

Heat oven to 350F Spray bottoms only of 2 8x4 inch loaf pans with cooking spray.

In large bowl, mix zucchini, applesauce, oil, egg, vanilla and splenda til blended. Stir in remaining ingredients except chocolate until well blended. Stir in chcolate. Spoon evenly into pans.

Bake 50-60 inutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rachsk. Cool completely; about 1 hour.

** You may substitute sugar for the splenda, and white or wheat flour for the soy flour. You may add 1/2 cup of chopped walnuts or pecans for variety.
