Ingredients

    2 onions, chopped
    12 cups vegetable broth
    3 lbs green beans, cut into 1 inch pieces
    6 carrots, sliced
    4 zucchini cut lengthwise and sliced
    1/2 green cabbage, chopped (about 4 cups)
    2 cans (28 oz) whole tomatos packed in juice
    2 cans (15 oz) red kidney beans, rinsed
    1 tsp basil
    1 tsp thyme
    1 tsp oregano
    1/2 tsp crushed red pepper flakes
    1/2 tsp pepper

Directions

Coat large soup pot with cooking spray. Cook onion until tender; 5-8 minutes. Add broth, green beans, carrots, zucchini, cabbage, tomatos, and spices. Boil, cover, and simmer 20 minutes. Add kidney beans and cook until hot, then serve.
