Introduction

Number of Servings: 6

Ingredients

    * Barley, pearled, cooked, 1 cup
    * Olive Oil, 4 tbsp
    * Onions, raw, 1 large
    * Butternut Squash, 2 cup, cubes
    * Water, tap, .25 cup (8 fl oz)
    * Parsley, dried, 3 tbsp
    * Salt, .5 tsp
    * *Lemon Juice, .13 cup
    * Beans, black, 2 cup

Directions

Makes 6 servings.
Saute sliced onion and squash in 2T oil for 10 min. until slightly softened.
Add water and half parsley.
Cook 2-3 min. longer.
Transfer to bowl. Add remaining ingredients.
Toss together and garnish with lemon zest if desired and serve.

    Good
    Very healthy; lots of contrasting textures - I felt it lacked flavour. I added a tsp of balsamic to each serving - but not quite there. Perhaps a handful of fresh parsley, grated apple or go another direction and add a diced fresh chili. Good basic; but I'd play with it a bit. - 8/2/11
