Ingredients

    2 cups eggplant, cubed
    1 Tbsp. olive oil
    Herbs to taste (I like dried basil & oregano, about half a teaspoon of each)
    salt and pepper to taste

Directions

Cut eggplant into bite sized cubes. Sprinkle salt over eggplant and let sit for 15 minutes. The bitter taste of the eggplant will "sweat out" and you'll see beads of liquid on the eggplant. Rinse the eggplant and then toss in the olive oil, herbs, salt & pepper. Bake on a baking sheet at 350 degrees F for 20 minutes.
