Lite soy milk works just fine! Lite soy milk works just fine!
Number of Servings: 4

    1 cup Steel-cut oats
3 cups hot water (not boiling)
1 1/2 cups lite soy milk
1/4 cup packed light brown sugar
    1 tbsp cinnamon

Spray inside of crock pot with non-stick spray (I use non-fat spray).

Add all ingredients to crock pot (if you'd like to add some raisins and/or cranberries, wait 'til several hours have passed, depending on the texture you prefer).

Turn to low setting.

Cook for 8-9 hours (turn on last thing before going to bed).

Number of Servings: 4

Use this method a lot for cooking overnight steel cut oatmeal. Works well. Sometimes just use all water and no sugar as we tend to add things to our oatmeal after it is done. - 7/11/16
