Greek Chicken Patties

5 pounds ground chicken breast
1.0 cup Progresso Bread Crumbs - Italian Style
1 large red onion, finely chopped
12 cloves garlic, minced
1 tablespoon extra virgin olive oil
3 eggs, well beaten
4 cups fresh spinach leaves, coarsely chopped
3 tablespoons McCormick Montreal Steak seasoning
16 ounces Feta cheese, crumbled
Preheat oven to 400 degrees F. Heat skillet with olive oil over medium heat. Add chopped onions and garlic and sauté until transluscent. Add the chopped spinach and briefly sauté until just wilted. Let mixture cool. Combine ground chicken and all remaining ingredients in a large bowl. Form into 3 ounce patties. Place on nonstick cooking pans. Bake for 10 minutes then flip patties and bake for an additional 5 to 7 minutes or until well browned. Makes 14 servings of 2 patties each.
