    Ground beef, lean, 24 oz
    White Rice, long grain, 3 cup raw
    Cabbage, fresh, 2 head, large (about 7" dia)
    Tomato Sauce, 3 cup
    Canned Tomatoes, 1 can
    Onions, raw, 1 large CHOPPED
    Green Peppers (bell peppers), 0.75 cup, chopped
    Basil, 2 tbsp CHOPPED FINE TO MAKE 2 TBSP
    Onions, 3 tbsp
    Garlic , 2 cloves divided
    Parsley, 2 tbsp
    Thyme, .5 t
    black pepper, 1t


Cook 3c of rice. Take 10 - 14 outer leaves carefully off cabbage. Do not break them Place them stem down in a pot of salted water, they don't have to be fully covered.Boil 5 minutes and turn off heat, let them sit. Shred cabbage to yield 5c. Brown meat, drain off oil and set on paper towels. Brown onions and peppers, let them drain with meat. Brown shredded cabbage - use more oil if necc. When it is cooked and browned, add canned diced tomatoes, 1 clove garlic and finely chopped basil. Stir and cook 5 min. Stir in 3/4c tomato sauce and 1/4c water, add meat mixture. Boil 10 min stir often. Mixture should still be wet. Add rice, stir well.
In a long baking pan our rest of tomato sauce, and garlic and more seasonings per taste (more minced onion, minced basil, thyme, black pepper).
Take pot with cabbage leaves and carefully pour off water. Add cold water to let leaves cool. Once cool, CAREFULLY pick up leaves. Set in a bowl and spoon in meat mixture to fill leaf, leave enough room to roll leaf around mixture. Put stem side of leaf inward, pull sides in, then roll top of leaf. Pick up cabbage carefully, place it in pan with tomato sauce. Continue making rolls, then spoon tomato sauce over all the rolls. Sprinkle with chopped parsley. Top with a pinch of cheese if desired.
Bake at 350* for 30 min. Stop midway through cooking, spoon sauce on rolls again. Serve roll with a couple of spoonfuls of sauce over it.
