Ingredients

Barilla tomato sauce, 2 cup
Ricotta part skim, 1 cup
Beef - 96% lean, 8 oz
Mexican 4 cheese shreaded, 28 gram(s)
Summer squash, 1 cup, sliced
Onions, raw, 1 cup, chopped
Garlic, 1 tsp
Parmesan Cheese, grated, 2 tbsp
MANICOTTI noodles, 4 oz
Olive Oil, 2 tbsp
Swiss Chard, 2 cup, chopped
9x9 glass baking dish
Directions
Saute garlic, onion , and olive oil (1 tbsp) in pan, once onions are soft add chard to pan and cover for 2 minutes. After 2 min pour into mixing bowl to cool off.
Cook beef in same pan and add remaining olive oil. Add you own seasoning to beef. Once cooked ,mix beef with onion, garlic, and chard. Add Ricotta cheese to mixtue. Mix well.
Stuff beef mixture into 7 manicotti noodles, you will have extra mixture which can be saved or discarded. Use a 9x9 glass baking dish. Spread 1/2 cup of tomato sauce on bottom of dish. Evenly spread squash on top of sauce. Place the noodles on top of the squash. Add the remaining sauce on top of the noodles then both cheeses.
Place in oven at 375 degrees for 30 min.
