Ingredients

    1 lb,. extra lean beef
    2 T. flour
    1/4 t salt
    1/4 t pepper
    1 T. canola oil
    1 onion
    1 celery stalk, medium
    1 carrot
    2 cups tomatoes, diced, canned
    1/2 t. thymed ground
    6 oz. egg noodles, uncooked

Directions

Cut meat into 4 serving pieces. Trim any visible fat. Combine the flour, salt and pepper. With a meat mallet, pound the flour mixture into the meat. Heat oil in a large n on-stick skillet and brown meat on both sides. Drain fat. Peel and chop onion; wash and chop celery and carrot. Add onion , celery, carrot, undrained tomatoes and thyme to skillet. Cover and cook over low heat about 1 hr. 15 minutes or until meat is tender. Skim fat. Serve over noodles that have been prepared according to package directions.
