Number of Servings: 12


    16 oz pack triple berries (unthawed is fine)
    1 1/4 cup sugar
    1/3 unsalted butter, softened
    2 eggs
    1/2 lowfat buttermilk
    2 1/4 cups all purpose flour (whole wheat works fine, you just may need a little more liquid)
    1 Tbsp baking powder
    1/4 tsp salt


Let this cool completely, cut into 12 pieces, wrap each in plastic wrap and freeze. Pull these out for a quick, on-the-go breakfast. They freeze great!


Grease a 9x13 in pan. Preheat oven to 350 degrees F.
Cream butter, sugar and eggs until smooth.
Continue beating while gradually adding the buttermilk.
Mix in flour, baking powder and salt. Gently fold in berries.
Spread evenly into the 9x13 pan.
Bake for 40 minutes or until toothpick comes out clean.
